Can you use this as a kitchen backsplash?
Absolutely! This is a great tile for a backsplash area - porcelain is twice-fired at extreme heat, so it can be placed near a burner as long as the stove/range is installed according to fire codes. It is also non-porous, so it won't absorb any ordors or stains from cooking splashes. You can use warm soapy water to wipe away any messes, or a porcelain-approved cleaner.
How should the edge be finished if we want to put this tile on a shower wall and bench? Concerned about a sharp edge.
You can use a tile trim piece to finish off the edges, or a Shluter trim piece if you prefer that style.

Our entire Japandi porcelain collection is made in Spain!
What type and color grout is recommended for the Maple for shower wall (with as little grout showing as possible).
We recommend Laticrete Permacolor grout. The smallest grout join we recommend for a tile of this size is 1/16". As regards to color, you can select the color you prefer and test a small corner of your installation area to make sure you like the combination before grouting entirely. Just like we offer cut samples of our Japandi tiles, you can request a grout color sample to preview the combinations in person before you install!
